In the wine cellar
At Sang des Cailloux, each wine is the expression of attentive know-how marked by respect for nature. From the bunch of grapes to the bottle, each stage of vinification is carried out with care:
Grape harvests
The grapes are harvested manually at perfect maturity with great care to guarantee an exceptional raw material.
Vinification
After complete destemming, the grapes ferment slowly by gentle infusion. All fermentations are carried out with indigenous yeasts. Long vatting periods allow the typicity of the terroir to be fully expressed.
Aging
Our wines are aged in concrete vats, tanks or barrels of 450 litres for a period of 10 to 12 months.
